The Fat Duck
The Fat Duck and proprietor Heston Blumenthal are world-renowned for their inventiveness. As a Director, Nigel worked closely with Heston, developing one of the world’s truly elite restaurants
Alongside delivering one of his trademark outstanding wine lists, Nigel was central to the smooth running of The Fat Duck’s back office. This ranged from designing order pads which allowed staff to handle the complexity of Heston's dining experiences, to physically building a PoS system. He was responsible for crafting and communicating key elements of The Fat Duck’s acclaimed customer experience.
Through Terroirs, Truffle Hunting helped Eric Narioo showcase wines in the UK, but in a Parisian style. Working with Eric, Truffle Hunting guided the interior design of a challenging venue on a tight budget. We turned it into the place where Eric’s ideas could be realised - avoid the sometimes sterile experience of wine drinking in English gastronomic restaurants
Highly influential, the ‘small plate’ phenomenon’s beginnings can be traced back to Terroirs and the work of Chef Ed Wilson. The venue’s food, wine and atmosphere have received a hugely positive reception in the media.
The Test Kitchen
Michelin-experienced Chef Adam Simmonds’ 12-month pop-up sits in the heart of Soho, London. The Test Kitchen is Adam’s London debut - a collaboration between Adam and the diner, where feedback is essential to the always-evolving menu.
Truffle Hunting played a big part in bringing Adam’s superb idea to life. We introduced Adam and his work to investors and found him his Frith Street location. We brought in the front-of-house team, managing the full HR package including training and staff handbooks. Our network of suppliers contributes many of The Test Kitchen’s products.We are also responsible for ongoing daily business analysis.
Princess Victoria, w12
Originally a Victorian gin palace and tram stop, The Princess Victoria sits in London W12. Truffle Hunting collaborated with Chef James McLean, finding investment and developing the pub itself. This led to Faye Maschler naming the PV as one of the ‘top places to eat in London’ and another AA Wine List of the Year award.
We developed upstairs rooms into spaces which are now popular for events and weddings. We redeveloped the PV’s attached wine shop and garden, working closely with Sipsmith to put together gin tours of the venue. As well as renovating physical spaces, we also managed the rebuilding of the pub’s brand.
Mele e Pere
Truffle Hunting worked with the extremely talented Peter Hughes and Andrea Mantovani to develop Mele e Pere’s brand. We knew that the concept of a Vermouth Bar could be a strong, standout element. We introduced Ed Scothen to the team to champion and deliver this idea, curating a large collection of vermouths alongside developing Mele e Pere’s very own.
Truffle Hunting also ran back-office for Mele e Pere. We facilitated the education of the team to eventually take over back-office themselves.
Camden Town Brewery
Jasper Cuppaidge’s Camden Town Brewery is a phenomenon. His mission to create great beer has been embraced by London and the wider world. Jasper brought Truffle Hunting onboard to ensure that Camden Town Brewery’s spaces retain the high level of quality he demands.
From managing compliance, to employing, training and developing new personnel, we have put in place systems to keep Camden Town Brewery bars in great shape. We have created key documents and guidelines for beer ambassadors and tours. It’s all about enhancing guests’ experience and maintaining superb standards.
Gara Rock, Salcombe
Gara Rock wanted to enchance their already hugely popular dining and living experience. From help with interior design, to development of the food and drink offering, Truffle Hunting’s support has enabled them to achieve their goal.
Together, we’ve developed a place that caters for a large variety of different audiences. For regulars and holiday makers, there's no compromising on a high quality experience for all.
RSC Rooftop Restaurant
Through Bennets Architects Truffle Hunting were invited to manage a complete overhaul of the RSC’s restaurant. We were brought in to conduct a feasibility study on bringing the restaurant's catering in-house. We delivered a business plan and employed the team to deliver it.
The Gentlemen Baristas
Founders Edward Parkes and Henry Ayres created a thriving, rapidly expanding coffee brand and community. With their ‘well-mannered coffee’, The GB's serve London’s finest from their coffee houses on Union Street and Store Street. With Truffle Hunting's help, they are taking things to the next level.
We have guided the GB’s through the structural organisation they needed to expand into multiple venues. We have developed their business model, their concept and ensured all compliance is managed appropriately.
Newman Street Tavern
Newman Street Tavern was a critically and ethically acclaimed ‘country pub in London’. Working with Chef Peter Weeden, Truffle Hunting delivered an AA Wine List Of The Year and ‘Best Pub’ in the Conde Nast Restaurant and Bar Design Awards 2013
Peter had a vision of a pub where sustainability was a major consideration in every activity. We marketed Peter’s product and managed back-office work like accounts and compliance, bringing his vision to fruition. Fishing, farming, wine and more were all delivered in as sustainable a way as possible. The Sustainable Restaurants Association rewarded our effort, awarding Newman Street Tavern their highest rating.
The Perkin Reveller
Historic Royal Palaces needed restaurant specialists to realise their ambition of a true addition to London’s restaurant market. The Perkin Reveller is the success we delivered.
We created and implemented the concept – a tribute to Chaucer, the Father of English Literature. Chaucer was responsible for building the Wharf, the restaurant’s location. Our interior design focus was on British-made products and suppliers. We strove to deliver furniture, cutlery and stonework made bespoke for our vision
We created and realised the entire business plan for the venue. This was also another of our projects with great emphasis on sustainability.
The Henry Root
Privately owned, Truffle Hunting worked with the owners to create a Chelsea neighbourhood restaurant. With Truffle Hunting’s help, the interior of the pub was designed partly in tribute to legendary satirist William Donaldson. The author of the notorious Henry Root letters, Donaldson had lived opposite.
Visitors would come to enjoy Chef Sang Nguyen’s fantastic small dishes, while feeling truly a part of Donaldson’s fascinating world.
Karpo has been a central feature of King’s Cross for decades. With the area recently being redeveloped, Truffle Hunting collaborated with owner Tony Magaro to refresh Karpo's brand and operating structure.
Renowned graffiti artists were invited to work on the building, drawing coverage from an intrigued media. Karpo’s reputation as a working space grew, with rooms available for London’s innovators and creatives.
The restaurant has thrived. Our expertise was applied to developing the menu and redesigning the physical space. With an indoor walled-garden and tables made from concrete benches, we helped Karpo bring acclaimed dining outside, inside.
