Nigel has unrivalled experience in the hotel and restaurant industry. He has been responsible for the implementation of award wining concepts from coffee bars to luxury resorts.
Prior to founding Truffle Hunting he was Managing Director of The Crazy Bear Group of hotels and restaurants, including the development of The Farm shop. And Director of The Fat Duck, working hand-in-hand with Heston developing the restaurant’s platform to become known as “The World’s Best Restaurant”.
His knowledge, creative approach and gentlemanly manner are appreciated by clients and colleagues alike. This has earned him a place at the top of the hospitality sector.
James kick started his career winning Young Chef of the Year at the Michelin Stared Reads in Kent before moving on to Interlude and Greenhouse in London, accomplishing Michelin Stars as part of the senior team at both restaurants.
He was Head Chef of The Stonor Arms and Chef Manager of The Goose, then two of Oxfordshire’s highest accolade winning remote venues. James has a great understanding of pub culture culminating in some of London’ best with Princess Victoria and Newman Street Tavern as owner director.
A moment which stands out for James was as founding chef at BAFTA for the renowned Capital Group which catered for the great and the good through the daily necessities to the annual celebrations and everything in-between.
James has a finite understanding of guest expectations that can only be delivered by focus and attention to detail.
